The tradition of salt-making goes back generations in the Loire-Atlantique. Whether you buy coarse salt or fine «fleur de sel», white or grey salt, the best comes from the salt marshes around Guérande. Chefs and restaurateurs regard this salt as ‘high-quality white gold’!

Some say salt is bad for your health. However, studies show that the gros sel (coarse salt) has nutritional value and is rich in magnesium. Dissolving quickly in water, it has a salty rather than bitter taste. And, it is a totally natural product, with no chemical process, no added iodine. It is gathered carefully by hand by 250 «paludiers» (salt makers) working on 5,000 acres/2,000 ha of shallow salt pans... and not a machine in sight!
On sunny days, when there is also a warm breeze, the seawater evaporates quickly, producing a fine deposit, called «fleur de sel», the flower of salt. This rare and delicate salt is coveted for its whiteness and for a slight scent of violets.
